This is one of our best meals. Not only is it delicious, but it’s also high in protein and low in carbohydrates, making it a great option for those following a gastric sleeve diet. We typically prepare this dish in a large wok, then portion it into small containers for freezing to enjoy later. This method of meal prep is convenient and ensures you have healthy meals ready on busy days. From the recipe below, we usually get 20-30 meals, but feel free to adjust the quantities as needed.

20g light butter for cooking | 20ml dark soy sauce |
100g chopped green onion | 30g honey |
5 crushed garlic cloves | 35g sweet chilli sauce |
1 tablespoon chopped ginger | 25g rice vinegar |
1 medium red onion, sliced | 1 tablespoon red pepper flakes |
3 mixed peppers (any colours), sliced | 1 tablespoon sesame seeds |
2 bags of protein noodles from Tesco | 20ml water |

Prepare the Sauce Mix:
- In a bowl, combine 50ml light soy sauce, 20ml dark soy sauce, 30g honey, 35g sweet chilli sauce, 25g rice vinegar, 1 tablespoon red pepper flakes, 1 tablespoon sesame seeds, and 20ml water. Mix well and set aside.
Brown the Mince:
- In a large pan or wok, cook the lean beef mince over medium-high heat until browned. Drain any excess fat.
Add Sauce to Mince:
- Pour half of the prepared sauce mix into the browned mince.
Add half of the chopped green onions.
- Mix well and continue to cook until the mince is crispy. Set aside.
Cook the Aromatics:
- In the same pan, add 20g of light butter and let it melt over medium heat.
- Add the crushed garlic cloves, chopped ginger, and remaining chopped green onions. Sauté for about 2 minutes until fragrant.
Cook the Vegetables:
- Add the sliced red onion and mixed peppers to the pan. Cook for another 2-3 minutes until the vegetables are tender but still crisp.
Add Noodles and Sauce:
- Add the protein noodles to the pan along with the remaining half of the sauce mix.
- Mix everything together and cook for 2-3 minutes until the noodles are heated through and well coated with the sauce.
Combine and Finish:
- Add the crispy beef mince mixture back into the pan.
- Mix everything together until well combined and heated through.
Serve:
- Serve the beef and vegetable stir-fry hot, garnished with additional sesame seeds and chopped green onions if desired.
